Lemon-Blueberry Cake

Ingredients

  • 2 1/3 of wheat flour
  • 2 teaspoons of baking powder
  • 1 1/3 cup of brown sugar
  • Zest of 2 large lemons
  • 1/3 cup lemon juice
  • 3/4 cup non-dairy milk
  • 1/3 cup vegetable oil
  • 1 1/2 cups fresh or frozen blueberries
  • 1 teaspoon vanilla

Preparation

  1. Preheat the oven to 350 degrees F.
  2. Sift the flour with the baking powder.
  3. In a separate bowl, mix the rest of the ingredients until smooth.
  4. Incorporate the two mixtures and add a cup of the blueberries.
  5. Place the mixture in a greased and floured cake pan and put more blueberries on top, pressing them slightly so that they are left with only the upper part exposed.
  6. Bake the cake for 50-60 minutes until when inserting a toothpick in the middle it comes out completely dry.
  7. Let it rest for 10 minutes before removing it from the pan.
  8. Let cool to serve and enjoy!
