Seba's Chana Masala

An indian favorite. A must try, you won't regret it.

Ingredients

  • 2 cups chickpeas (canned or cooked from dried)
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 inch ginger, minced
  • 2 tomatoes, finely chopped
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 teaspoon garam masala
  • 1 can of coconut milk
  • Salt, to taste

Preparation

  1. Heat the pan over medium heat. Add the onions and sauté until they are golden brown.
  2. Add the ginger and garlic and sauté for another minute.
  3. Add the tomatoes and cook until they are soft and mushy.
  4. Add the ground spices (coriander, cumin, turmeric, cayenne pepper, garam masala) and stir well.
  5. Add the chickpeas and salt and stir well.
  6. Add the coconut milk and bring to a simmer.
  7. Cook until the sauce thickens, about 10-15 minutes.
  8. Garnish with fresh cilantro and serve with rice or roti.
