Avocado Rolls

Ingredients

For the rolls:

  • 3 medium ripe avocados
  • 2 Tbs chopped sun-dried tomatoes
  • 1/2 medium red onion
  • salt to taste
  • Sheets of spring roll dough

For the sauce (optional): 

  • 1 cup coriander
  • 2 Tbs tamarind pulp (optional)
  • 1 pinch of cumin
  • 1 pinch of saffron
  • 3 Tbs honey
  • 2 Tbs olive oil
  • 1 Tbs lemon juice
  • 1 garlic clove, minced

Preparation

For the rolls:

  1. Chop the red onion very finely, and place it in a container. Add the dehydrated tomato, avocado and salt. Mix everything lightly.

  2. Spoon the avocado mixture onto the dough sheets in one corner, and fold the dough by rolling the avocado halfway, then fold the side corners toward the center, and continue rolling to the top of the dough.

  3. Once you've rolled up all of the avocado mixture, place the rolls on a sheet pan and bake on the highest setting for 3-5 minutes until golden brown, turning to brown on both sides.

For the sauce:

  1. Finely chop the coriander and put it in a bowl.

  2. Add the tamarind pulp, honey, garlic, cumin, saffron, lemon and oil. Mix it well.

  3. Serve with the rolls.
