Ingredients
- 3 Tbs of ground flax seeds + 8 Tbs of water mixed for 5 minutes (to replace the egg)
- 1 3/4 cups cane sugar (if you want a little sweeter add 2 cups)
- 1 cup vegetable oil
- 4 cups pumpkin Italian grated and excess liquid
- 2 tsps vanilla essence
- 1 tsp salt
- 2 cups flour
- 1 cup and 3 tsps wholemeal flour
- 1 tsp bicarbonate of soda
- 1/2 tsp baking powder
- 1 tsp cinnamon powder
Preparation
- Preheat the oven at 340º F.
- Mix wet ingredients, including sugar in a bowl.
- Add the flour and baking powder to the mixture and mix until you have a very thick dough.
- Place the mixture in two greased loaf pans and put them in the oven for 45-59 minutes until a toothpick comes out when dry.
