Carob Chia Pudding

This dessert is easy to prepare, and is surprisingly very healthy! 
Chia works as the main thickener to give it the perfect texture, adding a large dose of nutrients to the recipe. 
The cornstarch helps to thicken but it is not totally necessary to use it if you prefer not to, and you can simply mix the ingredients, omitting the cornstarch, and letting them sit overnight so that the chia acts as a binder/thichener. The coconut cream gives it a creamy texture, and a delicious flavor too!

Ingredients

  • 1/2 cup chia seeds
  • 2 cups of plant-based milk (almond, soy, oat, etc). 
  • 2-3 tablespoons carob powder
  • 4 tablespoons of honey or cane sugar 
  • 1/2 cup vegetable cream or coconut cream 
  • 1 heaping tablespoon of cornstarch 
  • 1/2 teaspoon vanilla 
  • 1 pinch of salt 
  • coconut cream for whipping, or vegetable cream for whipping 
  • carob chips to decorate

Preparation

  1. In a medium size bowl, place the almond/oat/soy milk plus the chia seeds and mix. 
  2. Add the honey, salt, vanilla, carob powder, coconut cream and cornstarch. 
  3. Put the mixture in a small pot, and cook it while stirring constantly to obtain the ideal pudding consistency.
  4. Turn off the heat when it is very thick and let it cool completely, and then place the mixture in the refrigerator for at least 2 hours. 
  5. Serve with whipped cream on top and sprinkle with carob chips.
