Coconut and Chia Dessert

Ingredients

  • 1 and 1/2 cups or a can coconut milk 
  • 1/3 cup chia seeds
  • 1 Tbs brown sugar
  • 1 Tbs vanilla essence
  • 1 cup fresh fruit such as chopped mango, raspberries, peaches, etc.

Preparation

  1. Let the coconut milk in the refrigerator for several hours, or overnight.
  2. Put the coconut milk in a medium bowl, and whisk it by hand because it tends to separate a bit.
  3. Add chia, vanilla, sugar and mix everything well.
  4. Let the mixture rest for at least 2 hours in the refrigerator until it begins to solidify and reach a viscous consistency.

  5. Serve it within 24 hours with fresh fruit on top to enjoy a delicious and 100% healthy dessert.
