Flourless Pancakes

Ingredients

For the Pancakes:

  • 1 1/4 cups ground oats (you can grind them in a blender, dry)
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup soy or almond milk
  • 1 Tbs honey
  • 2 Tbs plain yogurt soy
  • 1 Tbs ground flaxseed dissolved in 3 Tbs water

For Caramelized Apples:

  • 1-2 green apples, peeled and sliced
  • ​​2 Tbs honey or brown sugar
  • 2-4 Tbs water

Preparation

For the Pancakes:

  1. Heat a pan.

  2. In a bowl, mix the dry ingredients.

  3. In a blender, put all the wet ingredients, including the flaxseed dissolved in the water, which should be gelatinous.

  4. Blend wet ingredients and add to dry ingredients. Mix lightly just to incorporate them, don't over mix.

  5. In a very hot pan, if it is non-stick, you do not need to put any oil. Using a 1/4 cup measurer, spoon pancake mixture into skillet until golden brown, then flip for 1-2 minutes to brown the other side.

For the caramelized apples:

  1. Place them in a small pot with the water, without a lid, until they start to cook. When they are soft, put the honey and mix so that they cook a little more.

  2. Serve the pancakes with the apples on top.
