Zucchini and Chia Muffins

Ingredients

  • 1 cup whole wheat flour
  • 1 cup white flour
  • 1 cup grated Italian squash
  • 2 Tbs hydrated chia
  • ¾ - 1 cup sugar (preferably whole or cane sugar)
  • 1 tsp vanilla
  • 1/2 cup vegetable oil
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking powder baking soda                                                                                                                                                                                      
  • 1/2 cup plant based milk (almond, soy, coconetc) + 1 Tbs lemon juice (mixed to curdle milk)
  • 1 tsp ground cinnamon
  • 1 cup walnuts, chopped

Preparation

  1. Mix together all wet ingredients plus sugar and salt. Add the flours plus the powders and form a light dough.
  2. Spoon into a greased muffin tin and bake the muffins for 25 minutes or until a toothpick inserted comes out dry.
