Maca-Banana Muffins

Did you know that Maca is considered one of the top superfoods? It has gained popularity in recent years for its many health benefits including being a great source of iron, iodine and potassium, as well as for being a great energy booster. 
These muffins are a great way to incorporate Maca root powder as a great way to start off the day! 

Ingredients

  • 3 ripe bananas (mashed)
  • 2/3 cup oil
  • 1 Teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 3 tablespoons ground flaxseed
  • 1 1/2 cups of wheat flour
  • 1/2 cup of maca flour
  • 2/3 cup cane sugar
  • 1/2 teaspoon baking powder

Preparation

  1. Preheat the oven to 350º F.
  2. Mash the bananas with a fork or with a hand blender until you get a semi-liquid consistency.
  3. Add the oil, sugar, vanilla, and salt. Mix well until creamy. Add the flour, maca powder and the baking powder.
  4. Place the batter, which should be thick, in the muffin tins and bake for 25 minutes or until an inserted toothpick comes out dry.
