Apple-Cinnamon Muffins

Ingredients

For the muffins:

  • 1 cup white wheat flour
  • 1/2 cup wholemeal flour
  • 1/2 cup oatmeal
  • 1/2 cup applesauce
  • 1/3 cup oil
  • 2/3 cup sugar
  • 2 tsps chia ground
  • 1 tsp cinnamon powder
  • 1 tsp baking powder
  • 3/4 cup plant based milk (almond, soy, coconut, etc.)

 

For the topping:

  • 1/3 cup panela powder
  • 2 Tbs cane sugar
  • 1/3 cup flour
  • 2 Tbs oil

Preparation

  1. Mix the wet ingredients for muffins first; then add the flours and powders to form a slightly light dough.
  2. In a separate bowl mix the topping ingredients. Put a Tbs of topping on top of each muffin.
  3. Put them in the oven preheated to 350º F and bake them for 25 minutes until they are golden and puffy.
