Mini Pancakes

This version of pancakes is very fun to eat and enjoy especially with children.

Ingredients

  • 1 cup of oatmeal
  • 1/4 cup chickpea flour
  • 1/4 cup almonds
  • 1/4 cup flaxseed
  • 1/2 teaspoon salt
  • 1 tablespoon cane sugar or honey
  • 3 tablespoons wheat flour
  • 3 cups of water

Preparation

  1. Blend the oats, almonds and dry flaxseed first to obtain a flour, as fine as possible.
  2. To the same blender, add the rest of the ingredients and blend well until you get a light dough.
  3. Using a bottle with a lid with a finite hole (such as ketchup or mustard bottles), or with a spoon, place the mixture in the lightly oiled hot pan, forming the small pancakes.
  4. Brown the pancakes on both sides and serve.
