Scrambled "eggs"

Ingredients

  • 1 lb. semi-firm tofu
  • 1/2 finely chopped onion
  • 1 medium diced tomato
  • 1 crushed garlic clove
  • 1 tsp salt
  • 1./2 tsp turmeric powder or grated natural turmeric
  • 1 Tbs oil

Preparation

  1. In a pan, boil the onion with garlic, until the onion is translucent. Add the tofu and break it up with your hand, a fork, or another utensil.
  2. Add the salt and turmeric and mix well. Let it start to sweat and add the tomato. Cook for 5-10 minutes and serve hot.
