Nut and Seed Cookies

Ingredients

  • 1 1/2 cups oatmeal
  • 1 cup of wholemeal flour
  • 1/2 cup raisins (or cramberries, dried blueberries, etc)
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped almonds
  • 1/2 cup pumpkin seeds
  • 1/2 cup of oil
  • 1/2 cup of maple syrup (or honey)
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Preparation

  1. Preheat oven to 350 degrees.
  2. Grind the oats in a blender or grinder to obtain oatmeal.
  3. Mix all dry ingredients in a bowl.
  4. Mix the honey, oil and vanilla in another bowl.
  5. Combine the two mixtures and form a dough.
  6. Because of all the nuts, the dough will be loose and coarse in texture.
  7. Form balls with your hands forming them in your hands by pressing to join the ingredients. Place the balls in a tin lined with parchment paper.
  8. Bake the cookies for 10-12 minutes until golden brown and dry in appearance.
