Fossil Cookies

Kids just absolutely LOVE these cookies! Not only eating them but making them too!

Ingredients

  • 1 3/4 cups of flour
  • 1/2 cup peanut butter
  • 3/4 cup cane sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 2 Tablespoons flaxseed meal mixed with 2 Tablespoons water
  • 1/4-1/2 cup non-dairy milk
  • 1/2 cup of oil
  • Plastic toys of insects, dinosours, etc

Preparation

  1. Preheat the oven to 350 degrees
  2. In a bowl mix the sugar with the oil, the peanut butter, the flax seed meal mixed with the water, the vanilla and the salt
  3. Add the flour and mix well. If the dough is very lumpy or dry, add the milk little by little until it forms a compact dough.
  4. Form balls according to the size of the toys or figures/shells.
  5. On a cookie sheet covered with parchment paper, place the balls of dough and flatten them, pressing one of the figures on each cookie to leave the “print” or “trace” and thus form the “fossils”.
  6. Bake the cookies for 12-15 minutes or until the edges are lightly golden. Let them cool for about 10 minutes on the cookie sheet before removing them.
