Ingredients
- 1 cup flour
- 1 tsp vanilla
- 1/2 tsp baking powder
- 2 1/2 cups oats (two cups of the oats should be ground in a dry blender)
- 1/2 cup raisins
- 1/2 cup prunes or chopped dried apricots or sons (any dehydrated fruit will do)
- 1/4 cup chopped walnuts or almonds (or pumpkin seeds, sunflower, etc.)
- 1 cup oil
- 1/2 cup brown sugar
- 1/2 cup honey
- 2 Tbs ground flaxseed
Preparation
- Preheat the oven to 340º F.
- Mix oil, ground flaxseed, sugar, honey, salt and vanilla in a bowl.
- In another bowl, mix the flour, ground oats and flakes, baking powder, and all the nuts.
- Add the liquid ingredients to the dry ones and mix to form a dough.
- With wet hands, form balls and place them in order on a greased can or on parchment paper.
- Flatten the balls a little to shape the cookies and put them in the oven for 8-10 minutes until they are ready.
- Let cool and enjoy.
