Energy Cookies

Ingredients

  • 1 cup flour
  • 1 tsp vanilla
  • 1/2 tsp baking powder
  • 2 1/2 cups oats (two cups of  the oats should be ground in a dry blender)
  • 1/2 cup raisins
  • 1/2 cup prunes or chopped dried apricots or sons (any dehydrated fruit will do)
  • 1/4 cup chopped walnuts or almonds (or pumpkin seeds, sunflower, etc.)
  • 1 cup oil
  • 1/2 cup brown sugar
  • 1/2 cup honey
  • 2 Tbs ground flaxseed

Preparation

  1. Preheat the oven to 340º F.
  2. Mix oil, ground flaxseed, sugar, honey, salt and vanilla in a bowl.
  3. In another bowl, mix the flour, ground oats and flakes, baking powder, and all the nuts.
  4. Add the liquid ingredients to the dry ones and mix to form a dough.
  5. With wet hands, form balls and place them in order on a greased can or on parchment paper.
  6. Flatten the balls a little to shape the cookies and put them in the oven for 8-10 minutes until they are ready.
  7. Let cool and enjoy.
