Quinoa Cranberry Cookies

Ingredients

  • 1 1/2 cups oatmeal
  • 1 1/2 cups cooked quinoa
  • 1/2 cup maple syrup or agave syrup (or any honey)
  • 1/4 cup grapeseed oil or vegetable oil
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 cup dried cranberries

Preparation

  1. Process or blend all ingredients except cranberries.
  2. Add the cranberries at the end and mix.
  3. In a tray covered with parchment paper, place the dough in equal portions with a spoon and form the cookies with the same spoon or hand.
  4. Bake cookies for 30 minutes or until golden brown on top and bottom.
  5. Remove from oven, let cool in pan for 5 minutes, then transfer to wire rack to cool.
