Tofu Fajitas

Ingredients

For the tortillas

  • 1 1/2 cups white flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 Tbs olive oil
  • 1/2 cup hot water

For the fajitas:

  • 1/2 bell pepper or red pepper
  • 1/ 2 bell peppers or green peppers
  • 1/2 bell peppers or yellow pepper
  • 1 medium red onion
  • 1/4 kilo of fresh firm tofu
  • 1 Tbs honey
  • 2 Tbs soy sauce
  • 1 Tbs of tomato sauce
  • 1/4 tsp of paprika powder
  • 1/ 4 tsp of oregano
  • 1/4 tsp of cumin
  • 1/4 tsp of garlic powder
  • 1/4 tsp of onion powder

For the Cilantro sauce:

  • 4 Tbs vegetable mayonnaise
  • a pinch of fresh ground or powdered garlic
  • the juice of a lemon
  • 2 Tbs of chopped coriander.

Preparation

For the Tortillas:

  1. In a bowl, mix the flour, baking powder, and salt. Add the oil and mix with a fork to obtain a mixture that looks like wet sand.
  2. Add the hot water and form a dough. Form a ball on a surface with a little flour and divide into smaller balls according to the desired size to form the tortillas (for small tortillas it serves 4 or 5).
  3. Let the balls rest for 30 minutes covered with a towel.
  4. With a rolling pin, expand each ball to form thin tortillas, and roast them on a hot, NOT greased pan. Cook for about a minute on each side until golden brown. “Pockets” of air will form and that is good.
     

For the Fajitas:

  1. Cut the tofu into slices approximately 1cm thick. In a container, mix all the ingredients except the vegetables to form a marinade where the tofu is going to be placed and let it take on the flavor of the marinating sauce for 30 minutes to an hour.
  2. In a pan with a little oil, brown the tofu along with half of the sauce where it was being marinated on both sides until golden brown.
  3. Take out the tofu and in the same pan (be careful not to burn what remains stuck, if so, rinse the pan). 
  4. Grill the onion and bell peppers and add the rest of the sauce to brown them. Grill the vegetables for 1 to 2 minutes, just until they start to sweat but don't lose their crispness.
  5. Turn off the heat and add the tofu cut into strips. Serve along with the tortillas with cilantro sauce on top.

For the Cilantro Sauce:

  1. Mix all the ingredients.
