Asian Salad

Ingredients

  • 1/4 white cabbage
  • 1/4 red cabbage
  • 1 red bell pepper
  • 2 carrots
  • 2 scallions
  • 1/4 cup parsley 
  • 1/4 cup cilantro 
  • 2 Tbs honey
  • 3 Tbs soy sauce
  • 1 tsp sesame oil
  • 1 /4 cup vegetable oil
  • 1/4 cup lemon juice
  • 1 Tbs peanut butter
  • 1 tsp garlic minced or powder
  • 1 tsp grated ginger
  • 1/2 cup peanuts 
  • Salt to taste

Preparation

For the salad:

  1. Finely chop both cabbages.
  2. Grate the carrots, if possible on a coarse grater, into thin strips.
  3. Chop the cilantro and parsley.
  4. Cut the red bell pepper into fine strips.
  5. Chop the chives into slices, put everything in a large salad bowl.

 

For the dressing:

  1. Put minced or grated garlic in a small container.
  2. Also put the grated ginger.
  3. Mix in the bowl with the garlic and ginger, lemon juice, sesame oil, vegetable oil, salt, soy sauce, honey and peanut butter.
  4. With a fork or a mixer stir everything to make it emulsified and creamy.
  5. Spoon dressing over all prepared vegetables in a large salad bowl. Mix everything with your hands, squeezing the salad in your fists, so that the vegetables soften and everything is well incorporated.
  6. Add the peanuts and incorporate lightly.
  7. Taste the salad and add salt to taste.
  8. Serve immediately and enjoy the exotic and delicious flavors!
