Curried Potatoes

I love Indian food, and this recipe is so straightforward. Eat it with some naan bread, cumin brown rice, samosas, etc.

It is full of flavor, so I'm sure that your family will love it.

Ingredients

  • 2.2 pounds (1 kilo) of potatoes.
  • 2 large carrots.
  • 1 onion.
  • 2 cloves of garlic.
  • 1 tablespoon of curry powder.
  • 1 cup of frozen peas or cooked peas.
  • Sea salt to taste.
  • 1 cup of coconut milk.

Preparation

  1. In a pot, sauté the onion, finely chopped, and the garlic, crushed.
  2. Chop the potatoes in small cubes.
  3. Add the potatoes to the pot, and water unlit slightly, covering the potatoes.
  4. Boil and cook at medium heat for 10 minutes.
  5. Chop the carrots.
  6. When the 10 minutes are over, add the carrots and frozen peas (if using cooked peas, add them in step 8).
  7. Cook for another 10 minutes.
  8. Turn off the stove, add the coconut milk and curry powder, mix, and let sit for a few minutes.
  9. Serve and enjoy!
