Red Berries Crunch

Ingredients

  • 6 cups mixed berries (strawberries, blueberries, raspberries, cherries, etc.)
  • They can be fresh, or frozen, (seedless in the case of cherries).
  • 1 cup of cane sugar
  • 1/2 cup cornstarch

    For the top layer:
  • 2 cups instant oats
  • 1/2 cup wheat flour or gluten-free flour
  • 1/2 cup of cane sugar
  • 3-4 tablespoons of vegetable oil

Preparation

  1. In a medium to large bowl, mix the mixed berries with the sugar and cornstarch, making sure that all fruit is covered with the mixture of the other two ingredients.
  2. Place the fruit mixture in a baking dish deep enough to have the top layer fit well insde, as the fruit will boil over. 
  3. Using the same now empty bowl,  place the oats, flour, sugar and vegetable oil.
  4. Mix until it forms a moist, loose mixture.
  5. Spoon the oat mixture over the fruit, from the center out, but leaving the edges uncovered, forming an even layer.
  6. Put in the oven at 350 degrees  Farenheit for 35-40 minutes or until the fruit starts to boil and the juices look clear and glossy, and the top layer looks crispy and golden. 
  7. Serve warm or cold and enjoy!
