Cherry Cobbler

Ingredients

For the filling:

  • 1/2 cup brown or turbinado sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 3/4 cup of water
  • 1/2 kilo of cherries without stone
  • 1 teaspoon vegetable oil

For the topping:

  • 1/2 cup ground oatmeal
  • 1/2 cup of flour
  • 3 tablespoons of brown or turbinado sugar
  • 1/2 teaspoon salt
  • 3 tablespoons vegetable oil or vegetable butter
  • 1/2 cup non-dairy milk

Preparation

  1. Preheat the oven to 350 degrees F.
  2. In a medium pot, with the heat off, place the water, sugar, cornstarch and cinnamon, stir.
  3. Add the cherries and turn the heat on.
  4. Cook until it begins to thicken, stirring frequently.
  5. Place the fruit in a baking dish that has a good depth to be able to put the topping on top and prevent the fruit from spilling over when boiling in the oven. Set aside.
  6. In a bowl, place the ground oats, flour, sugar and salt.
  7. Mix and add the oil and butter and mix until you get a consistency like wet sand.
  8. Add the milk and form a light dough.
  9. Place this dough by tablespoons on top of the fruit covering all or most of the surface.
  10. Place in the oven to cook for 30-35 minutes until the topping is dry, golden and crispy.
  11. Serve warm with vanilla ice cream, or by itself.
