Chana Masala

Indian Garbanzo Stew

This Indian dish is one of my favorites! All the spices combined with the tomato sauce plus the other seasonings and the chickpeas are the perfect mix to accompany basmati rice and enjoy an ethnic lunch at home that equals and even surpasses eating it at a restaurant!

Ingredients

  • 3 tablespoons olive oil or vegetable oil 
  • 1 white onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon finely chopped ginger 
  • 1- 11/2 cups tomato sauce or crushed tomatoes 
  • 1 teaspoon of tumeric powder
  • 1 teaspoon Garam Masala 
  • 1 teaspoon ground cumin
  • 1 teaspoon salt 
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground coriander seeds (if you don't have any, use 1/3 cup chopped cilantro)
  • 4-5 cups of cooked chickpeas

Preparation

  1. In a saucepan, place the oil to heat slightly. 
  2. Add the onion, garlic and ginger. 
  3. Add the tomato sauce, spices, salt and mix well.
  4. Add the cooked chickpeas and let them cook in the spices until everything takes an even color. 
  5. Turn off and serve with rice and chopped cilantro on top.
