Amaranth, Millet and Pineapple Porridge

Amaranth cereal, like millet, is VERY rich in nutrients and since both are gluten-free, they are ideal for people with celiac disease. The combination of these two cereals results in a very pleasant and delicious texture.
This breakfast is sure to delight everyone and give them the perfect start to the day with all the energy and nutrition they need!

Ingredients

  • 1/2 cup amarnath, and 1/2 cup millet, cooked together in 2 cups water
  • 2 slices of fresh pineapple
  • 4 dates
  • Fruits to taste to decorate
  • Fresh granola
  • Almonds or walnuts

Preparation

  1. To cook the millet along with the amaranth, wash them first in a sieve and put them in water until they boil to soften and thicken. They can also be cooked in a slow cooker or pressure cooker. The grain to water ratios are 2x1, similar to other grains like brown rice. Add more water if needed. 
  2. Take the cooked millet and amaranth, and place it in a blender with the pineapple in pieces. Also add the seedless dates. Blend until you get a thick and creamy mixture.
  3. Serve hot and complement it with granola, fresh fruit, almonds or walnuts on top.
