Pineapple Coconut Energy Balls

Ingredients

  • 2 slices of dried pineapple
  • 1/4 cup dried apricots
  • 1/4 cup golden raisins
  • 1/2 cup puffed amaranth 
  • 1/2 cup almonds
  • Grated coconut to cover the balls

Preparation

  1. In a food processor, start by grinding the almonds alone until they are mostly flour-like. There will be bits but it doesn't matter.
  2. Add to the almonds, the pineapple in pieces, the apricots, the raisins, and the puffed amaranth to the mix.
  3. Process until everything is ground up and it's like a dough (it's going to be a little loose).
  4. With your hands, take small portions and squeeze the dough so that it becomes compact, forming balls.
  5. Cover the balls with grated coconut and serve.
