Cereal bars with fruit

Ingredients

  • 1/2 cup vegetable oil
  • 1 1/2 cups wheat flour
  • 2 cups oatmeal
  • 1/2 cup water
  • 2/3 cup cane sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup of peach jam plus 1/2 cup fresh raspberries (or can be a mix of two kinds of jams or 1 cup of jam from just one fruit of choice)

Preparation

  1. Preheat the oven to 170° C. Grease a rectangular or square baking tray with oil.
  2. Mix all ingredients in a large bowl except jams.
  3. With your hands, press 2/3 of the mixture into the bottom of your pan until even and relatively flat.
  4. Gently spread the jams, leaving a gap of 1 inch. around the outside (jams will burn if they are against the edge of the pan).
  5. Using your hands, evenly crumble the remaining 1/3 of the mixture over the top of the jams, pressing lightly so the crumbs stay in place after baking.
  6. Bake for 25-30 minutes on a center rack until lightly browned on top.
  7. Cool in the same pan on a cooling rack. Cut and serve!
