Rice Pudding

For 4 people

Ingredients

  • 1 cup rice
  • 3 cups water
  • 2-3 cups almond milk
  • 1 cup of coconut cream (optional)
  • 2 cinnamon sticks
  • 1/2 cup of honey or cane sugar
  • 1 tsp of vanilla
  • Grated lemon peel

Preparation

  1. In a pot, cook the rice with the water and cinnamon. The rice should be cooked for 2 hours until very open/soft. Take out the cinnamon sticks.
  2. Put the almond milk and lemon peel. Homemade almond milk is usually creamier/thicker than store-bought almond milk, so this should be considered when adding it. If creaminess is lacking, use coconut cream.
  3. Add the sugar or honey and boil until the liquid is reduced and thick. Serve warm or cold with cinnamon powder on top.
