Stuffed Arepas

Ingredients

For the arepas:

  • 2 cups arepa flour (precooked corn flour)
  • 2 cups cold water
  • 1/2 tsp salt
  • 1 Tbs oil

For the filling:

  • 1 cup textured soy protein
  • 2 cups boiling water
  • 1 finely chopped chives fine
  • 1 garlic clove, minced
  • 1 pinch of cumin
  • 1/2 tsp of dehydrated thyme
  • 3 Tbs of tomato paste

Preparation

For the arepas:

  1. Mix the flour with the salt in a bowl.
  2. Add the water with the oil and mix by hand to form a dough.
  3. Form the arepas with your hand, and cook them in a pan with a little oil until they are golden on both sides.

For the filling:

  1. Sauté the chopped chives with the garlic in a frying pan with a little oil.
  2. Add the boiling water, and immediately the soy meat.
  3. Season it with the salt, cumin and thymee, cook until the water is absorbed by the meat, and it is cooked.
  4. Add the tomato paste and mix well. Cook for another minute or two.
  5. Fill the arepas and serve immediately.

Serve with a fresh tomato sauce!
